Welcome to Cakes by Caitlin.


A fun way for me, Caitlin, to display my cakes for everyone to see. Making desserts and decorating them is something I have always loved to do, seeing someone smile because of a sweet treat I have made makes my day and makes me want to continue doing this forever. I hope you enjoy seeing what I have done and feel free to contact me if you are in need of a cake, cupcakes, or cookies.

So before I begin posting pictures let's start with a brief history and a few disclaimers.
I love desserts, who doesn't haha. My Mom saw my love of desserts and how I always was trying new things and trying to make them look fancy and suggested that I take cake decorating classes. So that's just what I did, I have taken two Wilton Cake Decorating Classes at A.C. Moore and would love to take the other two but just need to find the time. I never thought I would be any good at it or like it as much as I do but low and behold I have a slight knack for it- I'm no cake boss but most importantly I enjoy doing it! When I first started I would take pictures on my phone to show people, I apologize for the poor picture quality of some of the earlier cakes. I mainly work in buttercream icing but can also do things in fondant and royal icing. The purpose of this blog is to provide pictures to those who would like to see my cakes as well as for my to journal what I have done and how far I have come, you will see the first few cakes aren't exactly great. I plan to post pictures along with a brief description of the cake. I hope everyone enjoys it!

Egg-Cellent Cupcakes







These Easter Cupcakes were topped with a egg shaped graham cracker, that was then coated in decorating sugar and piped with buttercream to resemble Easter eggs.

Just for fun

A cupcake made to look like an eyeball, just for laughs.

Buttercream with Fondant Accents






A very similar cake to the last, however, this one was made for an Abby Cadabby and Elmo theme instead of the Sesame Street theme.

Tiered Cakes with Character Toppers







I will be the first to admit that I have never tried to make a figure out of fondant or modeling chocolate. For now, I have found that using figurines or candles on top of a cake to help represent your theme works wonders.
This cake was frosted in buttercream and then I applied fondant accent pieces of colors and shapes. This is a great idea if you like some of the things that can be done with fondant but not necessarily the taste of it, especially because the pieces can be pulled right off.

Calling all Superhero Fans




Every once in a while someone comes along who has an extreme passion for something or another and you want to give them a cake to reflect that. This is just that- a cake in the shape of Captain America's shield.

Character Cakes




This Tinkerbell cake was made from a character shaped pan and then decorated with buttercream icing to resemble the character. Then the birthday message was written on the cake board to prevent from interfering with the design of the character. Character cake pans are available at most craft stores.
*Please note: most character cake pans are relativly small, if needed for a party of 15+ I would suggest having an additional cake or cupcakes

Custom Fondant Cakes




This cake was made for a friend of mine who's husband is into computer gaming. She sent me links to the website of the exact computer mouse and mousepad he had and I was able to replicate it through fondant for her.

Sheet Cakes






I have made sheet cakes for a variety of showers and events that need to feed a large number of people. Both cakes shown here are done completely in buttercream.

A Slight Side Note

I have also made cakes for adult themed venues, such as bachlorette parties, but have chosen not to post the pictures here so as not to offend anyone. I just wanted to mention that these cakes were also available if wanted.

A crushed beer can






This cake was made my stacking multiple small round cakes on top of one another and the covering it in fondant and decorating with edible markers, much easier for this than trying to pipe all that in icing.
The nutrition facts all read "50" in honor of the 50th birthday party it was for.

A toilet?!?!








Again, I love that cake can be used to create shapes and even objects. This toilets cake by combing the shapes of a bundt cake and a square cake, both trimmed accordingly. It was then covered in white fondant and decorated with buttercream icing. Of course it may not look edible, but it is. The water in the bowl was made by tinting piping gel blue and then smooshed tootsie rolls were added for the "just used" toilet effect. The rug reads "Birthdays are a bunch of crap"

Royal Icing Flower









This two tier cake was covered in yellow fondant, adorned with lilies made from royal icing and then completed with buttercream piping.

Fondant Present






This was a square cake the I made into a present by using fondant.

Buttercream Roses




Nothing says elegant like roses, even edible ones. This cake was iced completely in buttercream, including the rose bouquet on top. This is one cake I definitely wish I had more pictures of.

Flowers



This was the second cake I made for the first Wilton Decorating Class. The cake is iced in buttercream and then covered in buttercream flowers.

Shape Cakes



One of the things I love about cake it that you can cut them basically into whatever you want. Both these cakes were made from trimming two 9" round cakes to the desired shape and then decorating them. Cakes can obviously be decorated with more frosting but another interesting way to decorate is by using candies and other edible materials. May I suggest the book Hello, Cupcake to anyone interested in decorating with other edible materials. It's a great fun way to make your cake fun and exciting without a ton of piping work.

Happy Mother's Day.. My first cake






Since my Mom was the one who convinced me to take cake classes I thought it was only right that my first cake should be for her. Thanks again, Mom!! I chose a dinosaur because as most people know I have a profound love of them.
As you can see, the writing is a little off center but not too bad for a first try haha.
