Welcome to Cakes by Caitlin.


A fun way for me, Caitlin, to display my cakes for everyone to see. Making desserts and decorating them is something I have always loved to do, seeing someone smile because of a sweet treat I have made makes my day and makes me want to continue doing this forever. I hope you enjoy seeing what I have done and feel free to contact me if you are in need of a cake, cupcakes, or cookies.

So before I begin posting pictures let's start with a brief history and a few disclaimers.
I love desserts, who doesn't haha. My Mom saw my love of desserts and how I always was trying new things and trying to make them look fancy and suggested that I take cake decorating classes. So that's just what I did, I have taken two Wilton Cake Decorating Classes at A.C. Moore and would love to take the other two but just need to find the time. I never thought I would be any good at it or like it as much as I do but low and behold I have a slight knack for it- I'm no cake boss but most importantly I enjoy doing it! When I first started I would take pictures on my phone to show people, I apologize for the poor picture quality of some of the earlier cakes. I mainly work in buttercream icing but can also do things in fondant and royal icing. The purpose of this blog is to provide pictures to those who would like to see my cakes as well as for my to journal what I have done and how far I have come, you will see the first few cakes aren't exactly great. I plan to post pictures along with a brief description of the cake. I hope everyone enjoys it!

First Birthday

Autumn Tiered Cake






A two tiered autumn themed cake frosted in buttercream icing and decorated in fondant leaves and acorns. This cake was donated to a Women's Ministry Banquet.

Christening Cake






A single layer 10" round cake with blue cornelli lace accents around the side.

Tiered Wedding Cake


My first attempt at a wedding cake. A two tiered squared cake complete with buttercream icing with a ribbon accent. A flower topper was added at the reception sight- hopefully will have pictures of that soon.

Super Mario Brothers Cupcakes

Custom Icing Flavors





A vanilla and chocolate marble cake drizzled in mint chocolate icing.
*Note- not all icing flavors are stiff enough that they can be used for decorating a cake.

Fondant Shells and Buttercream Cake











All 60 fondant seashells were hand molded and then placed upon a 3 tier buttercream cake.

Chocolate Decadence








Who doesn't love chocolate? A two layer 8" round cake all done out in chocolate glory.

Strawberry Shortcake Trifle








Sometimes the appearance counts a little less then the taste- such as this Strawberry Shortcake Trifle. It combines all the best things about a strawberry shortcake in a creamy and fun to eat dessert.

Not just cakes

Recently, it had come to my mind that I do bake other things than cakes and cupcakes and decided to start displaying some of those things as well. I will have to start taking pictures of them in order to do this but to start with here is a Dutch Apple Pie I made.

Hamburgers of all sizes





My hamburger "obsession" came from the desire to do something a little out of the box and fun for a bake sale I was running at work. I started off with a vanilla cupcake, sliced it in half horizontally, added brownie cut to size, put buttercream icing for the mustard, ketchup, and lettuce, and topped it off with sesame seeds. Not only did they look adorable but people at the bake sale absolutely loved them!











After the bake sale I kept thinking what was I going to do for my Dad for Father's Day. I decided to make him a giant burger cake since he is always grilling for everyone. I took the same basic premises as the burger cupcakes and stepped it up a notch. The cake is made from two 8" round yellow cake and an 8" round chocolate cake for the burger meat. The lettuce, cheese, tomatoes, and onions are made from fondant and secured to the cake with buttercream icing. Buttercream was also used for the mustard, ketchup, and mayonaise. Of course, it was adorned with sesame seeds to make it look authentic. To top it all off was a "King of the Grill: Happy Father's Day" sign.
